Agave Nectar, Quinoa...Am I a foodie?

I promise that I am not turning into a foodie blog.  As much as I wish I had the skills to make a living out of posting healthy, kid-friendly recipes, I am more the type to follow other blogs that give ME those recipes.  I have recently found a few that have been incredibly helpful, and feel it is good to pass these recipes and ideas on to others.

I love my son.  I'm trying my best to provide healthy, nourishing food for him and for my husband.  I hate the idea of never having the food that we enjoy around.  I like breads, I like cookies, I love yummy foods.  I'm not saying healthy food can't be yummy, but I don't want to give up those comfort foods like zuchinni bread or cookies for the sake of being "healthy."  I think that I can provide Rusty with healthier versions of those old foods that I loved, as well as some new alternatives!  I'm certainly trying!

I wrote before about quinoa, and I am still experimenting with it.  Today I made a quinoa, blueberry, milk mixture for breakfast and I thought it was delicious.  Rusty only went for about two or three tablespoons before he decided he was done and on to something else.  I'll keep trying!  Today we are having some friends over for a bbq and I'm making up a mexicana quinoa salad.  I hope it's a hit. 

My latest venture into all of this has been agave nectar.  It is a super sweetener.  Much healthier than sugar, and more potent as well.  When using it, you need less because it is more powerful than sugar.  So far I have made oatmeal to go bars and this afternoon I am trying zucchini muffins.  I grew up on zucchini bread and always loved it when my mom baked a fresh loaf.  I'm going to try these out and see how they taste.  I hope that Rusty likes them!  They could be a healthy snack for him, getting those good veggies into him in perhaps a sneaky way?  They certainly LOOK good!  We'll try them out as soon as they cool.

Most of these ideas have come from the website Weelicious.  It is chock full of healthy recipes for everyone from baby to adult!  Check it out!  I have yet to find one that didn't seem incredibly easy to make, and they are all full of flavour as well!
